Working cycle
The processes that can be automated into one automatic processing sequence are: size-reduction, mixing, cooking, pasteurising, vacuum-processing and deodorizing of the product (optional), emulsifying, indirect heating or cooling (with double jacket). The machine is equipped with a system of knives assembled on the bottom of the bowl; those knives rotate with the same motor speed causing a vortex inside the bowl to allow at the product inside l to be perfectly minced and mixed.
The mixing baffle completes the blending by folding any tough or sticky materials into the centre away from the inside surface of the bowl.
After the processing is completed, the hot product is discharged from the cooking machine trough a pneumati- cally operated discharge valve.
